This is our debut wild yeast fermentation; milled Cox apples left overnight to develop flavour before pressing and natural fermentation, then blended with the tannic King Jim.
The result is a real doozy!
The first encounter is pure thirst-quenching juiciness from the Cox, then comes the texture from the King Jim and a singing minerality that lures you in for another scoop.
