Classic Lemon & Vanilla Scones Recipe

Ingredients

  • 350g self-raising flour
  • 1 tsp baking powder

  • 90g butter, softened and cubed
  • 3 tbsp caster sugar
  • 150ml milk
  • 1 tsp vanilla extract
  • 1 lemon (juice)
  • 1 beaten egg (optional, for glaze)

Instructions

  1. Prepare the Dry Ingredients

    • In a large bowl, combine the self-raising flour, salt, and baking powder.

    • Brush the tops with beaten egg for a glossy finish.
  7. Bake to Perfection

    • Arrange the scones on the preheated baking tray, leaving a small space between each. Bake for 10 minutes, or until golden brown and risen.

    • Serve the scones warm with clotted cream and your favourite jam. If serving later, reheat briefly in the oven or microwave.
