Method

1. Prepare the Pastry (if making from scratch):

  • Mix flour, butter, and a pinch of salt until the mixture resembles breadcrumbs.
  • Add water gradually, mixing until it forms a dough. Wrap in cling film and refrigerate for 20 minutes.

2. Roll and Blind Bake:

  • Roll out the pastry to fit your tart tin, lining it carefully.
  • Preheat the oven to 200°C. Line the pastry with baking paper and weights (or dried beans) and bake for 15 minutes. Remove the weights, brush with egg white, and bake for an additional 5–10 minutes.

3. Cook the Filling:

  • Slice spring onions and sauté in butter with salt and pepper until softened. Cool slightly.
  • Blanch asparagus in boiling water for 2–3 minutes, then slice lengthwise.

4. Assemble the Quiche:

  • Lower oven temperature to 180°C.
