A simple, summer classic made even sweeter with vibrant cherry tomatoes. Perfect as a light summer dinner or nibble while you fire up the BBQ. The trick is to leave the tomato mix to sit with a pinch of salt for 10 minutes for the flavours to develop. For any garlic heads out there, crush the clove after rubbing the toast and add to the mix for an extra garlicky hit.
Ingredients:

4 slices of good sourdough or ciabatta

250g cherry tomatoes, halved or quartered

1 small garlic clove, peeled

A handful of fresh basil, torn

Extra virgin olive oil (we love Honest Toil)

Sea salt & black pepper

Optional: a splash of balsamic vinegar or torn mozzarella
Method:

Toast the bread in a dry pan or under the grill until golden and crisp.

While still warm, rub one side of each slice with the garlic clove.

In a bowl, toss the cherry tomatoes with a good glug of olive oil, sea salt, and a few cracks of black pepper. Leave to sit for 10 minutes.

Spoon the tomato mix generously over the garlicky side of the toast.

Finish with fresh basil and an extra drizzle of olive oil. Add a little balsamic or mozzarella if you’re feeling indulgent.
Chef’s tip: For an extra garlicky kick, after rubbing the toast, crush the clove and add to the tomato mix. Best served fresh!
