Roasted Cauliflower, Chickpea, and Date Salad wit Tahini

This roasted cauliflower, chickpea, and date salad is the perfect blend of warm spices, fresh herbs, and sweet Medjool dates, all topped with a smoky tahini-lime dressing. Ready in just 30 minutes, it’s an easy, healthy meal that’s bursting with autumnal flavours. With crispy air-fried chickpeas, tender cavolo nero, and toasted pine nuts for crunch, this salad isn’t just a side—it’s the star of the table.

Ingredients (Serves 2):

  • 1 cauliflower, chopped into florets
  • 3 tbsp olive oil
  • 1 tbsp Shawarma seasoning
  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 bunch cavolo nero, de-stemmed and chopped
  • 1 tbsp lemon juice
  • 6 Medjool dates, pitted and chopped
  • 2 tbsp toasted pine nuts
  • 1/2 red onion, pickled in lime juice
  • 4 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 can Mr Organic chickpeas, drained and rinsed
  • 3–4 tbsp All Dressed Up tahini-lime dressing

Method:

  1. Roast the Cauliflower: Preheat your oven to 200°C. Toss cauliflower florets with 2 tbsp olive oil, Shawarma seasoning, and 1 tsp salt. Spread on a baking tray and roast for 15–20 minutes, turning halfway.
  2. Air-Fry the Chickpeas: In a bowl, coat chickpeas with 1 tbsp olive oil, garlic powder, onion powder, smoked paprika, and 1 tsp salt. Air fry at 200°C for 15–18 minutes until golden and crispy.
  3. Massage the Cavolo Nero: Place the cavolo nero in a bowl, add lemon juice, and massage gently for a few minutes until tender. Rinse under cold water to balance the flavours.
  4. Mix the Salad Base: In a large salad bowl, combine the cavolo nero with chopped dates, toasted pine nuts, pickled onions, parsley, and mint.
  5. Assemble the Salad: Layer the roasted cauliflower and air-fried chickpeas on top of the salad base.
  6. Dress and Serve: Drizzle generously with tahini-lime dressing. Serve immediately and enjoy this wholesome, vibrant salad!
