Ingredients (Serves 2):
- 1 cauliflower, chopped into florets
- 3 tbsp olive oil
- 1 tbsp Shawarma seasoning
- 2 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 bunch cavolo nero, de-stemmed and chopped
- 1 tbsp lemon juice
- 6 Medjool dates, pitted and chopped
- 2 tbsp toasted pine nuts
- 1/2 red onion, pickled in lime juice
- 4 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1 can Mr Organic chickpeas, drained and rinsed
- 3–4 tbsp All Dressed Up tahini-lime dressing
Method:
- Roast the Cauliflower: Preheat your oven to 200°C. Toss cauliflower florets with 2 tbsp olive oil, Shawarma seasoning, and 1 tsp salt. Spread on a baking tray and roast for 15–20 minutes, turning halfway.
- Air-Fry the Chickpeas: In a bowl, coat chickpeas with 1 tbsp olive oil, garlic powder, onion powder, smoked paprika, and 1 tsp salt. Air fry at 200°C for 15–18 minutes until golden and crispy.
- Massage the Cavolo Nero: Place the cavolo nero in a bowl, add lemon juice, and massage gently for a few minutes until tender. Rinse under cold water to balance the flavours.
- Mix the Salad Base: In a large salad bowl, combine the cavolo nero with chopped dates, toasted pine nuts, pickled onions, parsley, and mint.
- Assemble the Salad: Layer the roasted cauliflower and air-fried chickpeas on top of the salad base.
