Ingredients (Serves 4)

For the Dough:

  • 300g plain flour
  • A pinch of salt
  • 1 heaped tsp baking powder
  • 125ml olive oil
  • 125ml water

  • 6 medium tomatoes, thinly sliced
  • 3 medium onions, finely sliced
  • Sea salt to taste
  • Dried oregano
  • Olive oil

Method

1. Prepare the Dough:

  • Preheat the oven to 200°C.
  • In a large mixing bowl, sift the flour, salt, and baking powder together.

  • Cover the dough and let it rest for 10 minutes.
  • Spread the dough over a baking tray (approximately 40cm x 30cm) or two round trays (26cm in diameter). Press with your fingers to create a thin layer and form a slight rim around the edges.

2. Prepare the Topping:

  • Finely slice the tomatoes and onions. A food processor can make this step quicker.
  • Evenly distribute the sliced vegetables over the dough.
  • Drizzle with olive oil, sprinkle with sea salt and oregano.

3. Bake the Coca:

  • Place the tray in the preheated oven and bake for about 40 minutes, or until the onions are tender and lightly caramelised.

4. Serve:

  • Slice and serve warm or at room temperature. Enjoy the taste of Mallorca in every bite!
