Ingredients:
For the Dip:
- 4 medium aubergines
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, finely chopped
- 2 spring onions, finely chopped (plus extra for garnish)
- 2–3 tbsp Belazu tahini
- 1 tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 tbsp white rice wine vinegar
- Salt to taste
For the Dumplings:

- 1 tbsp vegetable oil (for frying)
- 250ml water (for steaming)

- Fresh coriander, chopped

Instructions:
1. Char the Aubergines:
- Preheat a BBQ, gas stove, or oven (220°C).
- Place aubergines directly on a high flame, turning occasionally until skins are charred and flesh is soft (10–15 minutes). Alternatively, roast in the oven until blackened. Allow to cool slightly.
2. Prepare Aromatics:
- While the aubergines are cooking, finely chop garlic, ginger, and spring onions.
3. Make the Smoky Aubergine Dip:
- Peel the charred skin from the aubergines and scoop the soft flesh into a bowl.
- Add garlic, ginger, tahini, soy sauce, sesame oil, rice wine vinegar, and a pinch of salt.
- Mash or blend until smooth and creamy. Adjust seasoning if necessary. Set aside.
4. Cook the Dumplings:
- Heat vegetable oil in a non-stick pan over medium heat.
- Add lamb dumplings flat-side down and fry for 1–2 minutes until golden.
- Pour 250ml of water into the pan, cover, and steam for 5–6 minutes until fully cooked and water evaporates.
5. Assemble the Dish:
- Spread the aubergine dip generously onto a serving plate.
- Arrange the dumplings over the dip.
6. Garnish and Serve:
- Sprinkle with chopped coriander, sliced spring onions, and drizzle with peanut crispy chilli oil for added flavor and crunch.
