Creamy Cauliflower Soup with Warm Spices

A wonderfully warming cauliflower soup with a blend of cumin, cloves, and green chillies. This recipe is easy, wholesome, and perfect for winter days.


Ingredients

  • 2 tablespoons vegetable oil
  • 2 teaspoons cumin seeds
  • 3 cloves
  • 1 large white onion, diced
  • 1 large cauliflower (stems included)
  • 1.5 teaspoons salt
  • 3 small, thin green chillies, sliced
  • 1 litre stock (vegetable or chicken)
  • Optional: Drizzle of cream for serving

Method

Step 1: Toast the Spices

  1. Heat the vegetable oil in a large saucepan. Add the cumin seeds and cloves, allowing them to crackle and release their aroma.

Step 2: Sauté the Onion
2. Add the diced onion to the pan and cook gently for about 10 minutes, or until translucent.

Step 3: Add the Cauliflower
3. Stir in the cauliflower and salt, frying gently to coat it in the aromatic spices.

Step 4: Incorporate the Chillies and Stock
4. Add the sliced green chillies and cook for 2 minutes. Pour in the stock, cover with a lid, and simmer for about 30 minutes, or until the cauliflower is completely soft.

Step 5: Blend to Perfection
5. Use a blender to purée the soup until smooth and creamy. Adjust seasoning to taste.

Step 6: Garnish and Serve
