Bold Beans Beany Bake: A Comforting and Sustainable Recipe

Our Beany Bake, created in collaboration with Bold Beans, is a comforting and hearty dish bursting with flavour. Featuring sustainably sourced root vegetables, kale, and creamy Bold Bean Co. Queen Red Beans, this bake is a celebration of wholesome, locally sourced ingredients. Perfect for cosy dinners or meal prepping, it’s a must-try for anyone seeking sustainable and satisfying meals.

Ingredients (Serves 3)

Vegetables:

  • 2 tbsp olive oil
  • 400g root vegetables (e.g., celeriac, parsnips, or cauliflower), peeled and cut into chunks
  • 1 onion, finely chopped
  • 1 large leek, sliced into 2cm rounds
  • 2 garlic cloves, roughly chopped

Sauce and Add-Ins:

  • 2 tbsp creme fraiche
  • 1 tsp wholegrain mustard
  • 1 jar Bold Bean Co. Queen Red Beans, drained (or any beans you prefer!)
  • 70g kale or cavolo nero

Topping:

  • A large handful of parmesan cheese, grated
  • A large handful of breadcrumbs

Method

1. Roast the Vegetables:

  • Preheat the oven to 180°C.
  • Place the root vegetables in a roasting tray, drizzle with olive oil, and season with salt and pepper. Toss to coat.
  • Roast for 35 minutes to 1 hour, depending on the vegetables, until softened and caramelised.

2. Prepare the Sauce:

  • Heat 1 tbsp olive oil in a pan over medium heat.
  • Add onion and leeks with a pinch of salt and cook for 6–7 minutes, stirring frequently, until softened.
  • Stir in the garlic and cook for 1 minute until fragrant.

3. Combine Ingredients:

  • Mix in creme fraiche and mustard, stirring until combined. Simmer for 2 minutes.
  • Add Bold Beans and kale, cooking for 2–3 minutes until the greens wilt. Season to taste.

4. Assemble the Bake:

  • Add the roasted root vegetables to the pan and stir everything together.
  • Transfer the mixture to an ovenproof dish.

5. Add the Topping:

  • Sprinkle with grated parmesan and breadcrumbs. Bake for 4–5 minutes or until the top is golden.

6. Serve:

  • Spoon onto plates and enjoy this hearty, veggie-packed bake!
