This simple and versatile udon stir fry combines tender noodles, fresh vegetables, and your choice of protein in a rich, flavourful sauce. Perfect for a quick weeknight meal, it's adaptable to whatever ingredients you have on hand.


Ingredients

For the Stir Fry:

  • 400g Udon Noodles (frozen or pre-cooked)
  • 100g Mushrooms (shiitake, button, or any variety)
  • 2 Spring Onions, finely sliced
  • 200g Cabbage or Bok Choy (optional)
  • 1 Tbsp Sesame Oil
  • 250g Protein (Beef, Chicken, Turkey, Pork, Shrimp, or Tofu)

For the Sauce:

  • 3 Tbsp Dark Soy Sauce
  • 2 Tbsp Oyster Sauce (or Worcestershire Sauce as an alternative)
  • 1 Tbsp Mirin
  • 2 Tsp Brown Sugar
  • 1 Tsp Rice Wine Vinegar

Instructions

  1. Prepare the Sauce:

    • Mix the soy sauce, oyster sauce, mirin, brown sugar, and rice wine vinegar in a small bowl. Set aside.
  2. Cook the Noodles:

    • Bring a pot of water to boil and cook the udon noodles for 2 minutes, stirring gently with chopsticks to separate them.
    • Drain the noodles, rinse with cold water, and set aside.
  3. Stir Fry the Protein and Vegetables:

    • Heat a large frying pan or wok over high heat and add the sesame oil.
    • Add your protein of choice and stir fry for 2 minutes until slightly browned.
    • Toss in the mushrooms, spring onions, and cabbage or bok choy (if using), and stir fry for another 2–3 minutes.
  4. Combine Everything:

    • Add the noodles and prepared sauce to the pan. Stir everything together gently to coat the noodles and vegetables evenly.
    • Continue cooking for 3–5 minutes until everything is heated through and the sauce has slightly thickened.
  5. Serve:

    • Plate the stir fry and garnish with additional spring onions or sesame seeds, if desired. Serve immediately.

Tips:

  • For a spicier kick, add a teaspoon of chilli flakes or a dash of sriracha to the sauce.
  • Experiment with other veggies like bell peppers, snap peas, or carrots for added colour and crunch.
  • Leftovers can be stored in an airtight container in the fridge and reheated for a quick lunch.
