Ingredients
- 1 tin or 200g cooked fava beans
- 4 cloves garlic, minced
- 2 lemons, juiced
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Chilli flakes (optional)
- Chopped parsley
- Sliced tomatoes
Method
Step 1: Prepare the Beans
- If using tinned beans, drain half the liquid and add a splash of water.
- For dried beans, after soaking and cooking, place them in a saucepan with a little water.
- Gently cook and mash the beans until thick, leaving some whole for texture or mashing completely for a smooth consistency.
Step 2: Add Flavour
- Warm the beans and add minced garlic, lemon juice, and half the olive oil.
- Cook gently, ensuring all liquid is absorbed but the beans remain moist.
- Season with salt, pepper, and optional chilli flakes.
Step 3: Serve
- Serve warm, garnished with chopped parsley and sliced tomatoes.
- Pair with hot pita bread, flatbread, or rice for a complete meal.
