Crispy Baked Popcorn Mushrooms

These crispy baked popcorn mushrooms are everything you want from a snack: golden on the outside, juicy on the inside, and deeply savoury. Made with simple ingredients and baked in the oven, they’re lighter than fried versions but still deliver serious crunch. Perfect as a snack, party food, or a side dish with a dipping sauce.

Ingredients

  • 250–300g button mushrooms
  • 2 eggs
  • 1 cup panko breadcrumbs
  • ½ cup finely grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional but recommended)
  • Olive oil spray or a light drizzle of olive oil

To Serve (Optional)

  • Garlic mayo
  • Spicy ketchup or Ajvar
  • Aioli or ranch-style dip

Method

  1. Preheat the oven
    Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Prepare the mushrooms
    Wipe the mushrooms clean with a damp cloth and trim off any dry ends. If they’re large, cut them in half so they’re all roughly bite-sized.
  3. Set up your coating station
    In one bowl, whisk the eggs until smooth.
    In another bowl, mix the panko breadcrumbs, parmesan, salt, pepper, and garlic powder.
  4. Coat the mushrooms
    Dip each mushroom into the egg wash, letting any excess drip off, then roll in the breadcrumb mixture, pressing gently so the coating sticks well.
  5. Bake until golden
    Arrange the coated mushrooms on the prepared tray in a single layer. Lightly spray or drizzle with olive oil to help them crisp up.
    Bake for 20–25 minutes, turning once halfway through, until golden brown and crunchy.
  6. Serve immediately
    Enjoy hot from the oven while they’re at peak crispiness.

Tips for Extra Crunch

  • Use fresh panko breadcrumbs rather than fine breadcrumbs
  • Don’t overcrowd the tray — space helps crisping
  • For extra colour, finish under the grill for 1–2 minutes at the end


Once you try these, they tend to disappear fast - so you may want to double the batch.
