Is it cake? Is it bread? Some questions are too big even for us. Either way it's definitely easy and definitely delicious.
Ingredients
4 Very ripe bananas, the browner the better.
175g Flour
1 Teaspoon Baking Powder
A Pinch of salt
2 Eggs (or chia eggs or aquafaba for vegan alternative)
40g Coconut Oil and a little extra for greasing the tin
50g Brown sugar
A squeeze of honey
A teaspoon of cinnamon
A teaspoon of ginger
- yum, especially with melted butter on ;).
Method
Beat together the eggs and sugar. Add the banana and honey and mash well with a fork, then add all other ingredients and fold well, keeping the bubbles in.
Bake at 170 Celcius for 30 minutes (or until a knife comes out clean - be careful it may just have banana stuck to it).
This recipe can be varied in millions of ways, add blueberries, dark chocolate or anything else you can think of. Kinder bueno goes very well in it ;).
