Easy Vegan Flapjacks Recipe
Happy Veganuary! These vegan flapjacks are a delightful plant-based treat that’s super simple to make. Even if your flapjacks turn out a little crumbly, you've just created a delicious vegan granola—win-win!
Ingredients:
- 200g porridge oats (avoid large oats for better binding)
- 120g coconut oil
- 70g sugar
- 3 tablespoons honey or maple syrup (for a fully vegan option)
Optional Extras:
Add a pinch of cinnamon, nuts, dried fruit, fresh fruit, or chocolate chips. For an indulgent twist, top the cooled flapjacks with a layer of melted dark chocolate.
Method:
Step 1:
In a large saucepan over medium heat, add the oats, coconut oil, sugar, and honey or maple syrup. Stir until all the oats are well coated. If using extras like cinnamon or nuts, mix them in now. Reduce the heat and stir well for about 10 minutes.
Step 2:
Preheat the oven to 160°C. Line a baking tin with parchment paper, or grease it with extra coconut oil. Transfer the oat mixture to the tin, pressing it down firmly with the back of a spoon to ensure even baking.
Step 3:
Bake for 30–35 minutes, or until the top is lightly golden. Let the flapjacks cool completely before slicing into squares or bars. Enjoy as a snack, dessert, or on-the-go energy boost!
Pro Tip:
Store your flapjacks in an airtight container for up to a week, or freeze them for longer-lasting treats.
