Easy Fried Rice with Peppers, Carrots, and Broccoli

Peppers, Carrots, and Broccoli Fried Rice

A quick, healthy, and vibrant recipe, this fried rice dish is loaded with fresh vegetables and bursting with flavour. Perfect for a satisfying meal, it combines the earthiness of turmeric, the zing of Chinese 5-spice, and the sweetness of honey to create a delicious and nutritious dish.


Ingredients

  • 4 tbsp vegetable oil (half sesame oil for added flavour)
  • A sprig or two of rosemary
  • 3 leeks, sliced
  • Soy sauce to taste
  • 1.5 tsp salt
  • 1.5 tsp turmeric
  • 1 tsp chilli flakes
  • 250g carrots, sliced
  • 1 large broccoli, sliced (including stalks)
  • 2 tsp cumin
  • 3 tsp black mustard seeds
  • 1 red chilli, finely sliced (optional)
  • 2 red peppers, sliced
  • 2 yellow peppers, sliced
  • 5 garlic cloves, finely sliced
  • 1 thumb-sized piece of ginger, finely sliced
  • 1 lime, juiced
  • 1 tbsp honey
  • 2 tsp Chinese 5-spice
  • Boiled rice, slightly undercooked for best results

Method

  1. Prepare the Base
    Heat 3 tbsp of oil in a pan until hot. Add rosemary and stir as it crackles, infusing the oil.

  2. Cook the Aromatics
    Add the sliced leeks and sauté for a few minutes. Stir in soy sauce, salt, chilli flakes, and turmeric. Add the carrots and cook for another few minutes.

  3. Layer the Flavours
    Stir in cumin, mustard seeds, and broccoli stalks. Add the red chilli if desired.

  4. Add Vegetables
    Toss in the peppers, broccoli florets, garlic, and ginger. Fry for another 5 minutes, stirring frequently.

  5. Finish with Seasoning
    Drizzle honey over the mixture, sprinkle with Chinese 5-spice, squeeze in lime juice, and adjust with more soy sauce if needed. Continue cooking and stirring for 2 minutes.

  6. Combine with Rice
    Add the pre-cooked rice to the pan and mix well. Cook for another few minutes until the rice is evenly heated and coated with the flavours.

  7. Serve
    Dish up your fried rice and enjoy with a soothing cup of green tea.
