10-minute Seasonal Wild Garlic Pesto

With just a handful of simple ingredients and easy-to-follow instructions this recipe will take you on a culinary adventure celebrating the vibrant flavours of the season.

Ingredients:

100g wild garlic leaves
50g Parmesan cheese, grated
50g pine nuts or walnuts
150ml extra virgin olive oil
Salt and pepper to taste

Instructions:

Wash the wild garlic leaves thoroughly and pat them dry with paper towels.
In a food processor, combine the wild garlic leaves, grated Parmesan cheese, and pine nuts or walnuts. Pulse until finely chopped.
With the food processor running, gradually add the olive oil in a steady stream until the mixture reaches your desired consistency.
Season with salt and pepper to taste, and pulse briefly to combine.
Transfer the wild garlic pesto to a clean jar or container and store it in the refrigerator. It can be kept for up to a week.
