3 Easy 5-minute Summer Dips for Corn Tortilla Chips

Dip into summer with our three fresh 5-minute recipes, featuring the one and only Cool Chile Co. If you haven't tried their Corn Tortilla Chips already, your summer snacking game needs some attention. No worries though, they're available in all of our stores and online!


Garlic Yoghurt Dip

Ingredients:

  • 1 cup Greek yoghurt
  • 3 tablespoons mayonnaise
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 2 tablespoons fresh coriander (cilantro), chopped
  • splash of olive oil
  • Salt and pepper to taste

Steps:

  1. In a medium bowl, combine the Greek yoghurt and mayonnaise.
  2. Add the minced garlic, lime juice, olive oil and chopped coriander.
  3. Mix well until all ingredients are evenly distributed.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving to let the flavours meld together.

2. Tomato Bruschetta Dip

Ingredients:

  • 1 cup of diced tomatoes
  • 2 tablespoons olive oil
  • half of white onion, finely diced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Steps:

  1. In a bowl, combine the diced tomatoes, olive oil, and balsamic vinegar.
  2. Add the chopped parsley and onion and mix well.
  3. Season with salt and pepper to taste.
  4. Let the mixture sit for about 10 minutes to allow the flavours to blend.
  5. Serve immediately or refrigerate for later.

3. Classic Guacamole

Ingredients:

  • 2 ripe avocados
  • 1 small red onion, finely chopped
  • 1 medium tomato or a few cherry tomatoes, diced
  • 1 clove garlic, minced
  • coriander
  • Juice of 1 lime
  • Salt and pepper to taste

Steps:

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
  2. Mash the avocado with a fork until you reach your desired consistency (chunky or smooth).
  3. Add the finely chopped onion, diced tomato, chopped coriander and minced garlic to the mashed avocado.
  4. Squeeze in the lime juice and mix well.
  5. Season with salt and pepper to taste.
  6. Serve immediately to prevent browning, or cover with plastic wrap and refrigerate.
