The Ethical Dairy Story
Since 2007, The Ethical Dairy has been busy designing a dairy system that keeps calfs with their mothers to suckle naturally - the result is happier cows and calves, a huge reduction in antibiotics and massive increases in biodiversity. The farm is certified organic and pasture for life with soil data showing the farm to be net zero.
Laganory is young, hard cheese with a fresh, sharp and tangy flavour, and a savoury body. The aroma is sharp with pickled notes and the texture is firm with a slight crumble. With age it will become drier and more crumbly.
This cheese is handmade using vegetarian rennet and raw, organic milk from our cow with calf dairy farm, and is ripened for 2-6 months.
