
The inspiration for our handmade Beef Shin Ragu hails from the northern regions of Italy, Tuscany and Emilia Romagna. This corpulent sauce is slow cooked for over six hours in red wine reduction to gently extract the flavours of our rich 100% British Beef. The base Soffritto (carrots, onions and celery) provides the balance of sweetness and sharpness that gives this ragu the homey feeling that we all enjoy over a piping hot bowl of Tagliatelle or Pappardelle.
