Tofu & Mixed Vegetable Stir Fry with Whole Wheat Noodles

Seasonal produce – Mushrooms, Garlic, Red Onions, Broccoli, Peppers & Carrots 

 

Ingredients: 

Stir Fry Sauce: 

Sweet Chilli Sauce

Dark Soy Sauce

Plum Sauce

Rice Wine Vinegar

Fresh chopped garlic (3 cloves)

Salt & Pepper

Fresh chopped red chilli

 

Tofu:

Firm Tofu (pressed & chopped into medium sized cubes)

Dark Soy Sauce

Chinese 5 Spice (1-2 teaspoons)

Salt & Pepper

 

Whole wheat Noodles

 

Chopped:

  • Red Onions Mixed peppers
  • Broccoli
  • Mushrooms

 

 

 

Prep

Stir Fry Sauce:

Pour 2-3 tablespoons of each of the sauces & vinegar into a mixing bowl, then add your chopped chilli, garlic, salt & pepper. Mix thoroughly then sit to one side.

Tofu:

Place the chopped tofu in a bowl and add your salt, pepper & Chinese 5 spice, toss/mix until all pieces have a good coating. Then add your dark soy sauce, again ensuring even coating on all pieces. Set these aside to marinade for around 10 minutes.

Method

 

Before cooking any of the veg or tofu first get a large pot of hot water on the boil ready for your noodles.

 

Get your wok nice and hot with a healthy glug of vegetable oil in so when you add your chopped vegetables they start sizzling immediately. Cook these for 5-8 minuets (depending on how soft or hard you like your stir fry veg). Then add your stir fry sauce that you made earlier ensuring all veg gets a healthy coating & cook for a further 2-3 minuets & set aside.

 

Then in a separate frying pan, heat up another glug of oil & fry the tofu until slightly crispy. (this usually takes 5-8 mins then set to one side.

 

While your veg and tofu are cooking add your whole wheat noodles to the pot of boiling water and cook for 6 minutes. When cooked drain off your noodles and quickly run under some cold water to stop them over cooking.

 

 

 

Serve

On a large plate or bowl lay a nice portion of noodles as your base.

Then top your noodles with the stir fry veg and ensure that you get enough sauce out the wok to allow this to soak into the noodles too!

Finally, last but by no means least add a portion of your cooked tofu on top of the veg & enjoy!
